Yoghurt-baked Chicken with Cauliflower Rice

Serves 2

  • 2 x 150g skinless chicken breasts

Yoghurt mixture:

  • 1 clove garlic, finely sliced
  • 1 red shallot, finely sliced
  • 1 tablespoon dill, chopped
  • 1 tablespoon coriander leaves, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 100g low-fat plain yoghurt
  • 1 egg
  • juice of ½ lemon
  • 1 teaspoon olive oil
  • Salt and pepper

Cauliflower rice:

  • 1 cup (approx. 120g) cauliflower, coarsely grated
  • 20g pistachios, toasted and chopped
  • pinch turmeric powder
  • pinch of cumin powder
  • 1 tablespoon coriander leaves, chopped
  • 1 tablespoon mint, chopped
  • 1 tablespoon olive oil
  • Salt and pepper
  1. Pre heat the oven to 180°c.
  2. In a bowl, mix the ingredients for the yoghurt mixture together and season well with salt and pepper. Then place chicken breasts into the mixture. Leave to marinate in the fridge for 20 minutes or overnight.
  3. Place chicken and the mixture into a baking dish lined with baking paper. Bake in the oven for 12-15 minutes or until cooked through.
  4. To prepare the cauliflower rice, add grated cauliflower in a small saucepan with olive oil. Cover with the lid and let it steam over middle heat for 3 minutes (no water is needed because the cauliflower itself contains enough moisture). Take it off the heat and add the remaining ingredients. Season well and set aside.
  5. Serve chicken with cauliflower rice and crumble some of the baked mixture over the chicken.

Oh my goodness! So yum! I cooked my chicken for 30mins. I only used coriander once but I'm going to omit it next time as the flavour is too strong other than that PERFECT!

Made this for dinner tonight, it was yummy. I marinated the chicken overnight, it was moist and tender. The cauliflower rice was amazing!!!! My son even ate it, and he hates cauliflower. He did think it was rice. Will make again

The cauliflower rice was absolutely yummers, chicken was good however think I may have done the marinade wrong as it curdled but all in all pretty darn good!!

I cooked a similar dish but used fresh caught fish. First time I have eaten or made cauliflower rice and my hubby and I absolutely loved it to bits! Super tasty :-)

OMG this was fantastic and soooooo tasty....my whole family loved it and yes I left the chicken in for an extra 5 minutes as it does need it but again it depends upon your oven.

Y U M !!!!!!! have to admit i was a but dubious about this one.......but it was DELICIOUS!!!!
I marinated the chicken for a couple of hours and it was sooooo tender and full of flavour.
The only trouble i had was it took way longer to cook it in the oven and i had nothing in the baked mixture that would crumble over the top of the meal, it was all pretty saucy.
Can't wait to do this one again though =)))))

Absolutely amazing!! It did take more than 15 minutes to cook the chicken though.... So a bit of trial and error time wise. But I loved this and my partner who isn't on CS loved it too and he is really fussy with his food, your typical 19 year old male. Surprised he enjoyed it! :D

I tried this recipe the other day and absolutely LOVED it!! It was so delicious. Especially the Cauliflower rice too; I have since cooked the Cauliflower Rice a couple more times as a side with other dishes (my partner loves it - he kept saying, "This rice is amazing!", and I said "You know there's actually no rice in there, don't you?", and he was like, "Really?! No way."). I loved that the whole thing was so easy and quick to make, plus there was minimal washing up thanks to the baking paper trick. I will definitely be cooking this Yoghurt-baked Chicken recipe again when we next have people over! Thank you Jennifer Evans :)
