Minestrone Soup

Serves 2 (meals)

  • 1 tablespoon olive oil
  • 70g bacon, diced
  • ½ onion, diced
  • 1 clove garlic, crushed
  • ½ carrot, diced
  • 1 stalk celery, sliced
  • 2 cups chicken stock
  • 400g canned chopped tomatoes
  • 1 tablespoon tomato paste
  • 40g cabbage, finely shredded
  • 100g green beans, cut into 2 cm lengths
  • 1 small zucchini, diced
  • salt and black pepper
  • 10g parmesan, grated
  1. Heat olive oil in large saucepan, add bacon, onion, garlic, carrot and celery and cook for 3 minutes until onion is soft and fragrant.
  2. Add chicken stock, tomatoes and tomato paste.
  3. Bring to the boil, then reduce heat and simmer for 20 minutes or until vegetables are tender, stirring occasionally.
  4. Add cabbage, beans and zucchini and cook for a further 10 minutes.
  5. Season with salt and pepper and serve with parmesan.

Tip: For a vegetarian option, replace the chicken stock with vegetable stock and omit the bacon.

If anyone uses a pressure cooker put all ingredients in and set to soup for 20mins and it's perfect!

This was great. I didn't like the smell and thought I wouldn't like it but it was the best! I didn't add beans, bacon, cheese or cabbage the second time I made it and it tasted the same, maybe a bit better! Also saved me some carbs/sugar/calories :-)

Really tasty, whole family enjoyed it for lunch. About to make it again,so quick and easy, is a real bonus too, wlll be a firm favourite.

Hi Dr Vicki, you'll notice that there's a tip at the end of the instructions that says "Tip: For a vegetarian option, replace the chicken stock with vegetable stock and omit the bacon.". We've included it in the vegetarian category to allow vegetarians an extra recipe choice, since it can be adjusted to be vegetarian-friendly.

This is on the vegetarian recipe page but with bacon and chicken stock it is not vegetarian!

OMG This was really yummy . Thought I should spit it out had to much taste even my whole family love it . Going to try some more reciepes from this site. Thankyou I thought I was to only eat cardboard when dieting

Sorry AmyAnderson, you're right this recipe does contain bacon. Silly us! Not sure how we missed that; clearly our eyes aren't working properly. We hope you enjoy this yummy soup, with all its bacon-y goodness!

Hi AmyAnderson, This recipe doesn't contain bacon, but yes you are allowed bacon on the Program, so long as it has been trimmed of all fat before cooking.

Of course, Blackaby, you can most certainly take a serve of leftovers with you to work the next day. That's a wonderful idea and a great habit to get into. You could even freeze portions of soup to make it last longer - fantastic to have as a healthy meal option when you are short on time or don't have food organised for dinner.

Can these soups be halved, refridgerated and reheated and put in a flask for work.

Substitute the Chicken Stock with Veg stock to make this a true vego dish. Would be good if recipes had a break down of nutrition.
