Broccoli Soup

Serves 2

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 clove garlic, crushed
  • 500g broccoli, cut into small florets
  • 2 cups vegetable stock
  • 2 tablespoons pine nuts, toasted
  • salt and black pepper
  • 2 tablespoons light sour cream
  1. Heat the oil in a saucepan.
  2. Add the onion and garlic and cook, stirring, for 3-4 minutes or until soft.
  3. Add the broccoli and stock.
  4. Cover and bring to the boil. Reduce heat to low and simmer for 10-15 minutes or until tender.
  5. Remove from heat and add the pine nuts.
  6. Using a food processor or blender, process soup in batches until smooth.
  7. Return soup to saucepan and season with salt and pepper.
  8. Stir over low heat until warmed through.
  9. Serve with sour cream.

It has to have low carb content: no potatoes or pumpkin. If not tasty enough add a whole onion and chilli when frying the onion.

I made broccoli cheese soup yesterday... just brocc, salt red chicken stock in slow cooker, blend when cooked and then stir in grated cheddar... s and p to taste... boy was it good ... have no idea of carb content tho .....

I have made this before but instead of sour cream added some grated low fat cheddar and allowed to melt ( do not boil once cheese is added) . Its really tasty

I guess you could also swap the broccoli for califlower and so a califloer soup
