Cauliflower Cheese

Serves 4. Enjoy 1 serve of this dish as part of your healthy balanced meal with meat. Alternately, you can enjoy 1 serve as a snack between meals.

  • 1 large cauliflower, divided into florets
  • 1 knob of light butter
  • 40g cheddar cheese, diced
  • 5g cheddar cheese, grated
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 50ml light double cream
  1. Pre-heat oven to 220°C.
  2. Boil the cauliflower in a saucepan of salted water until tender and drain.
  3. Combine the cream, butter, diced cheese, mustard and salt in a bowl over a pan of simmering hot water and stir constantly until smooth.
  4. Place cauliflower in an ovenproof dish and cover with cheese sauce. Sprinkle with grated cheese and place in oven for 10-15 minutes.
  5. Sprinkle with paprika and serve.

in NZ double cream IS NORMAL THICK CREAM with the red top found at any dairy or supermarket

Hi there. In New Zealand we don't have double cream - drives me crazy as a lot of nice looking recipes use it! Is there anything I could use instead??

I'm a vegetarian, can I have 1 serve of this with a vegetarian dish e.g. Frittata, Poh's vegetarian lasagne, etc. to make up for a meal? Thanks!

I like the sound of this as cauli cheese is one of my fave foods. If I wanted to have this as my evening meal and no meat, would I still have 1 serve and some veggies?

Really enjoyed this snack. I found the sauce a little runny but it had so much flavour! this is one of my favourites :)

Not being a great lover of cauliflower, it was with some trepidation that I tried this recipe. To my surprise it was awesome! Even hubby liked it! Definitely be doing this one again.

This dish sounds really nice, I am only starting out on the program tomorrow and was wondering if you can have this with meat and other vegetables (from the allowed list) or only by itself. Sorry if this sounds a bit of a stupid question?

this is yummy...with any meat or as a snack too...i have also made the sauce and used it with leeks for an alternative :)
