Carrot & Zucchini Fritters

Serves 4 as a snack

  • 1 medium carrot
  • 1 medium zucchini
  • 4 spring onions
  • 1/3 cup reduced fat ricotta cheese
  • 1 egg
  • 1 tablespoon self-raising flour
  • 1/4 teaspoon cayenne pepper
  • Olive or canola oil spray
  1. Wash vegetables
  2. Grate carrot and zucchini and chop spring onions.
  3. Mix vegetables, ricotta cheese, egg, flour and cayenne pepper.
  4. Lightly spray non-stick fry pan with oil spray. Heat to 150°C.
  5. Place large spoonfuls in fry pan, flatten and cook for 7 minutes or until golden.
  6. Turn to other side and cook a further 7 minutes or until golden.

(Saturated Fat = 1.9g)

Sorry to hear you had a little trouble - we've taken a look at the recipe and noticed that it is actually missing an ingredient (1 tablespoon self-raising flour), so that explains why they unfortunately wouldn't have turned out as they should have. I have no idea what I did wrong.. they kept falling apart and I kept burning them trying to cook them longer to stop them falling apart. Disappointed as they smelt delicious but just couldn't get them the turn into a fritters :(

Made these tonight & whilst they tasted ok, I too had them fall apart on me. Its almost like they need an extra egg or some breadcrumbs to help bind them together. They look nothing like the picture above.

I popped these into friand/muffin moulds rather than pan-frying them and baked them at 180 for about 20-25 minutes. I also used low-fat cheese as I was out of ricotta. Very nice.

maybe you need a little more egg to hold it together.turn out like little mini omlets/frittatas.i use onion, carrot,zucchini,egg and s&p.yum

Did you squeeze out the water from the zuchinni, as it gets ver wet when you grate it.

Made this last night and had 2 for dinner with salad and brought 1 for snack today to work and my husband pinched one for supper. They are very nice or should I say were very nice. Easy to make also.
