Chargrilled Wild Barramundi with Mango Salsa

Serves 2 (meals)

  • 2 wild barramundi steaks, about 180g each
  • 1 tablespoon olive oil
  • salt and black pepper
  • ½ fresh mango, diced
  • 1 roma tomato, diced
  • ½ Lebanese cucumber, diced
  • ½ red onion, diced
  • 2 tablespoons chopped fresh coriander
  • 1 tablespoon fresh lime or lemon juice
  • 80g rocket
  1. Season the barramundi with oil, salt and pepper.
  2. Heat a grill plate or barbecue and cook barramundi for 5-10 minutes until cooked.
  3. To make the salsa, combine the mango, tomato, cucumber, onion, coriander and lime or lemon juice and mix well.
  4. Serve the barramundi with the rocket and top with the mango salsa.

Tip: If you can't find wild barramundi, you can make this recipe with any other fish.

Hi Rachel067, Unfortunately because cous cous is a wheat product and is high in carbohydrates, it should be avoided on the Celebrity Slim Program during the Trim and Rapid Phases. OMG!!!! The mango salsa just made this already yummy fish amazing!!! I added a few finely chopped chillies too for a bit of bite DELISH!!! Had it with lightly stir fried vegies from the "Good" list and just added a baked potato for a dose of carbs for my body building, mma/boxing athletic man who needs it!!!! He loved it!!! I was so full I love this whole shakes and then one nice healthy correctly proportioned meal!!! I have the smallest appetite...the shakes are perfect then I get a nice meal at the end of the day...so easy!!! LOVE IT!!!
