Smoked Chicken & Roasted Cherry Tomato Salad

Serves 2 (meals)

  • 8 cherry tomatoes
  • 2 teaspoons olive oil
  • Salt and black pepper
  • 200g smoked chicken breast, shredded
  • 20g almonds
  • 15g parmesan, shaved
  • 50g rocket
  • 2 tablespoons low-fat mayonnaise
  1. Preheat oven to 180ÂșC.
  2. Place the tomatoes in a roasting dish, drizzle with olive oil, season with salt and pepper and roast for 10 minutes.
  3. Meanwhile, toss the chicken, almonds, parmesan and rocket in a serving bowl.
  4. Place the tomatoes on top and serve the mayonnaise on the side.

Tip: If smoked chicken is not available, use a steamed or grilled chicken breast.

Had this for lunch, delicious. Might try it with turkey around Christmas with turkey.

I don't have parmesan is that ohk to leave out?

Had this for dinner tonight, my bestie Jess an I are doin the diet together an we absolutely love preparing our meals together, then going walking afterwards. This was an awesome light but filling feed. Talk about yum! <3

Had this salad for dinner last night. I grilled the chicken and tossed it in, I have to say it was gorgeous and i was nicely full afterwards.
