Beef Chilli Stuffed Capsicums

Serves 2

  • 400g lean minced beef
  • 4 capsicums (any colour is fine; green, red, yellow etc.), stem, seeds and base removed
  • 400g tin of chopped tomatoes
  • 1 medium onion
  • 1 clove of garlic
  • 1 teaspoon paprika
  • 1/2 fresh red chilli
  • 50g reduced fat grated cheese
  • 2 tablespoons olive oil
  1. Add 1 tablespoon of olive oil to a frying pan. Add onion and fry gently until softened, then add minced beef and cook until browned. Add garlic, paprika, chilli and tomatoes and simmer for 20-30 minutes until most of the liquid has reduced.
  2. Preheat oven to 200ÂșC and brush the capsicums with the remaining oil. Fill each half capsicum with the minced beef mixture, top with grated cheese and bake for 20 minutes.
  3. Serve with low fat sour cream and a mixed salad.

I found it hard to cook thick capsicums all the way through (and getting them to stay upright) so I cut them into 2cm cubes, and add them once the meat has browned. I then place it all in a oven-safe dish for 20mins, add the cheese on top, and put it back into the oven for another 10. Works great! I also love adding the Masterfoods mexican spice blend for a bit of heat and smokey flavour.

Beautiful and simple, had a Mexican feel about it. Next time I will dice zucchini and stir the cheese through the filling prior to baking. We will be having this again soon :)

i didnt realise this was a meal for 2 , iv only made one capsicum each for me and my partner ! damn . ohwell we are having salad with it aswell i will remember for next time :)

What do you do with chilli, onion & garlic before you add them to the beef?? Slice, crush, throw in whole??

Yes noodle, two stuffed capsicums equals 1 meal. The capsicums can be any size you like :) It should be no problem for you to use lamb or chicken instead of beef. Enjoy!

What a coincidence to see this recipe as I was planning on having stuffed capsicums next week. I do not eat beef, so will be looking at either substituting it for lamb or chicken mince or even diced chicken breast.

Question: So two stuffed capsicums will be a meal? Are we talking small capsicums or normal sized (which here tend to be quite big)?
