We recommend using a Mild Curry Paste in this recipe. For example, Patak's make a Mild Curry Paste, which is simply a curry paste containing basic curry flavours and ingredients. Many other types of curry pastes can also be used if preferred, but most other types have a very specific 'dish' taste which may change the overall flavour of this dish i.e. red curry, korma, tandoori etc. Whereas a plain Mild Curry Paste has a more generic curry flavour that tends to work well in this particular dish, as it allows the other ingredients to shine through. If you are struggling to find a plain mild curry paste, you could try mild curry powder (just a couple of teaspoons; you can add more or less to give it the amount of punch that you prefer).
