Coronation Chicken

Serves 4

  • 4 cooked chicken breasts, skins removed
  • 15g light butter
  • 1 onion, chopped
  • 2 tablespoons Mild Curry Paste
  • 2 tablespoons tomato puree
  • 1 handful of raisins
  • 75ml red wine
  • juice of half a lemon
  • 4 tablespoons mango chutney
  • 200ml low fat mayonnaise
  • 200ml low fat greek yogurt
  1. In a small pan heat the butter and add the onion and cook for 3-4 minutes until softened.
  2. Add curry paste, tomato puree, wine, mango chutney and lemon juice and simmer uncovered for 5 minutes until the sauce is reduced to a chutney consistency.
  3. In a bowl mix together the raisins, mayonnaise and yoghurt, adding salt and pepper to taste.
  4. Combine the two mixtures together and add the diced chicken breasts.
  5. Serve with either wilted spinach or a green salad.

Cooked the chicken with ingredients in the slow cooker. Wilted some spinach and served. I didn't add the raisins.. not a fan. Was amazing! Will be making again :D

How many calories is this dish per serve. I really enjoyed this dish. I didnt add the red wine turned out amasing.

christieandnick - I haven't made this but as I was reading everyone's comments I was thinking that I would poach the chicken breasts in some Chicken stock & water if I did make it. It would stay moist and absorb the flavours better.

Is this ok to have on the rapid diet? I wouldn't think Mango chutney and mayo would be something to have when you're trying to lose weight.

We recommend using a Mild Curry Paste in this recipe. For example, Patak's make a Mild Curry Paste, which is simply a curry paste containing basic curry flavours and ingredients. Many other types of curry pastes can also be used if preferred, but most other types have a very specific 'dish' taste which may change the overall flavour of this dish i.e. red curry, korma, tandoori etc. Whereas a plain Mild Curry Paste has a more generic curry flavour that tends to work well in this particular dish, as it allows the other ingredients to shine through. If you are struggling to find a plain mild curry paste, you could try mild curry powder (just a couple of teaspoons; you can add more or less to give it the amount of punch that you prefer). We're thrilled to hear so many of you have enjoyed this dish - thanks for the wonderful feedback!

Not a big fan of this. It was ok, but although i followed the recipe, it tasted to much like mayo to me. A bit dissapointed.

Going to make this tomorrow night, however just wondering what "curry paste" you suggest using? At the supermarket I can find a red curry paste or a green curry paste, but not just a plain curry paste? Please help so I get this delish sounding dish right

Loved this. Had it on top of cabbage. The rest of the family had it on rice. My 1 year old enjoyed it as well. Will cook again.

This was delicious. I made a slaw salad of finely sliced or grated cabbage, carrot, small amount of cheese and spring onions and red capsicum. It tasted great with the chicken. The sauces was rich and scrum-didily-umcious (as my 5 yo would say).

This was yummy, I didnt use the wine but chicken stock instead. I doubled the recipe as I am feeding 6 people (4 teenagers!!!) I cooked rice for them to have with theres. It went down well and I will make it again :)

This is delicious, have cooked it twice now, and tasted just as good second time around, not doubt will be cooking it again as the family love it. First time I made it we had salad with it, which strangely works with curry, the second time I put it on a bed of spinach and served some veggies on the side. It is so easy to prepare and is very filling x

This is utterly amazing, the dish is BEAUTIFUL! i recommend to try it without the red wine as it gives a lovely thick creamy soft taste. Really good will deffinitly be having this again and again! xx
