Chicken Curry

Serves 2

  • 2 large chicken breast fillets
  • 2 medium onions, diced
  • 3 cloves of garlic, crushed
  • 1 tablespoon tumeric
  • 1 tablespoon ginger
  • ½ teaspoon chilli powder
  • 2 tablespoons olive oil
  • 200ml hot water
  • 200ml low fat crème fraiche or low fat sour cream
  • 1 packet 250g bean sprouts
  • 1 packet 250g baby spinach
  1. Cut chicken breasts into cubes and fry in a little oil until brown, then set aside.
  2. Fry onions, garlic and spices for 2-3 minutes then add chicken back to the pan coating with the spices.
  3. Add hot water and crème fraiche, and simmer for approximately 20 minutes until chicken is tender and sauce has reduced by half (stirring occasionally).
  4. 5 minutes before the end of cooking, add remaining oil to a frying pan and stir fry bean sprouts.
  5. Stir in the bean sprouts and baby spinach leaves just before serving.

I followed the recipe really closely and this was super average in my experience! Had to add lots of extra spices and salt for it to be palatable. I may have done something wrong :/

Love this curry so smooth made just perfectly, don't really need rice better with baby spinach I'm making again

I was worried I wouldn't like this but it was really good! I did find that it seems like a lot of food. For two servings I might half the chicken as it was just so much. I copied kaseyh22 idea and added extra spices and it seemed just right. We used light sour cream which was nice but I may try the light cream next time. I can't believe it was filling enough and tasted great without any rice. Will def make again

Made this last night! Was amazing. Added 1 tsp chilli instead of 1/2 1 tsp gram masala powder 1tsp ground cumin on top. Made for 3 people! Will defo make again.

Made this for dinner last night, it was very tasty! Used extra light cream for cooking instead of light sour cream. I've realised since being on CS I prefer curries without rice!!! Never thought I would say that!!!!!!

I think they might mean 717 kj in which case it would only be around 170 cals per serve :)

Isn't this a bit too high in calories for the diet at 717 if sticking to 1200 calories per day it doesn't really leave much room for the shakes or any snacks?

Have you tried slim rice? It's a new product in my local Coles. It's like slim pasta - really low in carbs and made from vegetables. Alternatively try the cauliflower rice recipe - yummy! :-)
