1 wedge = 1 allowable snack

  • 1½ tablespoons olive oil
  • 50g green beans, cut into 2 cm lengths
  • ½ green pepper, diced
  • 1 small zucchini, sliced
  • ½ onion, chopped
  • 1 clove garlic, crushed
  • 1 red chilli, deseeded and finely chopped
  • 100g ham, chopped
  • salt and black pepper
  • 3 eggs, beaten
  1. Heat the olive oil in a medium frying pan, then add the vegetables and ham.
  2. Cook over medium heat, stirring occasionally, for about 10 minutes until the vegetables have released their flavours.
  3. Season well with salt and pepper, then pour over the beaten eggs.
  4. Reduce the heat and cook for about 5 minutes, then transfer to a preheated grill and cook until golden brown.
  5. Turn out onto a plate and allow to stand for a few minutes.
  6. Cut into 4 wedges to serve (1 wedge = 1 allowable snack).

Tip: Serve with a salad or steamed vegetables to make a meal for two. For a vegetarian version, simply omit the ham.

I have made this recipe a few times and absolutely love it. I live alone so I have half for dinner and then use the leftovers for snacks. Tastes great cold as well. I always use red capsicum instead of green and leave out the chilli. Didn't have any beans the first time I made it so used asparagus instead :)

could i change it a little to what i have in my kitchen..leave out the chilli change the green pepper to red and instead of Zucchini add carrot ? And well my kids wont eat chilli :) .

Instead of having the leftovers cold for a snack - I have broken it up in a frypan to reheat with a splash of sesame oil, splash of soy sauce (teaspoon each?) and 1 cup of bean shoots - yummy! Better than last night.

the recipe calls for 'finely chopped' but doesn't say what ingredient is finely chopped (after the crushed garlic on the ingredients list). Has something been left out?

I just made these, i didn't have any beans so i used a grated carrot instead .. I also cooked them in the mini muffin pan.. My youngest has already taken one and loves them ..

If you don't have a grill also you could just use the non stich frypan and slide onto a plate when cooked underneath, the flip back into the frypan, it's easy :)

Another twist on this if you don't have a great grill is to cook the mixture and put into cup cake trays (the silicon non stick ones are good because you don't need pasty) then add your egg mixture and good in the oven at about 160 (fan forced) for about 30 minutes.
