Eggplant & Ricotta Rolls

Serves 2 (meals). Alternatively, enjoy 1-2 as a snack.

  • 1 medium eggplant, about 350g
  • 2 tablespoons olive oil
  • 200g fresh reduced-fat ricotta
  • 1 tablespoon chopped fresh basil
  • salt and black pepper
  1. Thinly slice the eggplant lengthwise into six 5 mm-thick slices.
  2. Place on a baking tray and brush each side with oil.
  3. Heat a non-stick frying pan or grill plate and cook eggplant on both sides until tender and brown.
  4. Transfer to a plate and keep warm.
  5. Mix ricotta and basil together in a medium bowl and season with salt and pepper.
  6. Divide the ricotta mixture evenly among aubergine slices and roll to enclose.
  7. Serve with steamed greens.

Tip: These eggplant rolls can also be baked with tomato sauce and cheese on top.

Loved this dish. I sort of improvised by using a muffin tray and layered it with grilled eggplant, tomato sauce, ricotta mix and mozzarella and some more eggplant on top and baked for about 8 mins. Very tasty

If you can provide the carbs list on the receipe it would be fantastic. I think most of us are oncalori based diets

This was yummy, even the children liked it. Had with tomatoe paste and cheese. Very first dish I have tried, really looking forward to making and trying some others, if they all taste as nice as this. I'm liking this new eating pan

I tried this and it was delish. Just added tomato as suggested by 'witchymamma and layered like a lasagne. Didn't even miss the pasta.
