Beef & Spinach Curry

Serves 4

  • 500g spinach, chopped
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 1 1/2 teaspoons crushed garlic
  • 1 1/2 teaspoons finely grated ginger
  • 2 green chillies, finely chopped
  • 2 teaspoons allspice
  • 2 teaspoons ground cumin
  • 480g lean beef, cubed
  • 1/2 cup low salt beef stock
  • 1 tablespoon lemon juice
  1. Using a food processor, chop the spinach with 1/4 cup of water.  Set aside.
  2. Heat the oil in a medium saucepan and fry the onion until soft.
  3. Add the ginger, garlic, chilli and spices, stir until fragrent, then add the beef in batches and sear on all sides.
  4. Return the beef to the saucepan, add the stock, lemon juice and spinach. Cover, and simmer until beef is tender, about 45mins, adding more stock if necessary.

Hi Gulsom, Yes you can either divide the ingredients by 4 to make just one serve, or to save time and hassle, we recommend you simply make the full recipe for 4 and you can simply freeze any leftover portions to have on hand for easy meals. Enjoy!

I loved this... Reminded me of my mums Mediterranean soup she makes with lentils... Incorporating this to my diet once a week for dinner!!! Would like to know how many calories it has though...

Totally not pretty but ahhhh, the taste!!! Even my visiting Dad, who will eat anything, blanched at the look of this dish but on tasting it was impressed! Beautiful tasting meal!

I made this with venison fillet - superb with a beautifuly rich flavour. It will definitely go on to my favourites list. (Cauli and Broccoli to accompany it).
