Beef Stroganoff

Serves 2 (meals)

  • 1 tablespoon olive oil
  • ½ onion, sliced
  • 130g mushrooms, sliced
  • 1 teaspoon paprika
  • 300g rump steak, sliced
  • 2 teaspoons tomato paste
  • ½ cup red wine
  • 2 tablespoons light sour cream
  • salt and black pepper
  • 2 tablespoons chopped fresh parsley
  1. Heat half the oil in a heavy-based frying pan, add onion, mushrooms and paprika and cook until lightly browned and juices from mushrooms have evaporated.
  2. Remove from pan and set aside.
  3. Return pan to the heat, add the remaining oil and stir-fry the steak over very high heat for about 2 minutes, adding the tomato paste and wine about halfway through.
  4. Simmer until slightly reduced, then add the sour cream and return the mushroom mixture to the pan.
  5. Season with salt and pepper and stir in the parsley.
  6. Serve with fresh steamed green beans.

Tip: Make this recipe in advance and freeze in portions for an easy dinner.

Found the red wine taste a little overpowering. Overall, didn't enjoy it nearly as much as the other recipes I've tried on here (loved all the others so far though!).

Made this last night, was really yummy! Whole family enjoyed it. I had it with green beans and everyone else had green beans and brown rice. Considering having a small portion of leftovers for lunch today as it would be around the same calories as one of my rapid shakes onky less carbs and sugars...

second night making dinners from this site and its good, I agree surprisingly I haven't been missing potatoes and sweet potato which was all we ate in the house, I still make mash for my daughter but yet not tempted to eat it...

This was delicious we also had it with chicken & white wine & it was just as good. I served it with slim pasta & steamed vege's.

this was yummo!!!! replaced the red wine for chicken stock and added grated Zucchini and a handful of mixed baby spinach! noice!

miniann, the wine in this dish can sometimes make it slightly tangy, so feel free to omit the wine (many people prefer it this way). Great idea serving with Cauliflower Mash; delicious isn't it!

not bad. mine turned out a bit tangy - I followed the recipe exactly so maybe I will try different wine next time. Served with mashed cauliflower so it looked like a very hearty dinner on the plate :)

could have some yummy approved "rice" to go with this.
Grate the top of a fresh caliuflower so i makes something similar to rice grans, put it fry pan with a very small amount of oil and add spring onions (diced) and garlic (diced) and abit of pepper if u wish.
fry it of in the fry pan and it makes a great alternative to rice.

I enjoyed making this dish, but I think I must have put too much wine in (never a bad thing though!) as the sauce was quite thin. Apart from that I enjoyed it and will try it again, but with less wine to see if that thickens up the sauce.

Easy to make and DELICIOUS! Helped me feel full and as though eating "real" food versus "diet" food. Even my children enjoyed it (but they had the addition of rice). : )

I made this last night for my main meal. It was fab! Didn't use the red wine or have the green beans, but used savoy cabbage as a base. This is my first week on the plan, and I'm gradually getting used to the fact that there is no need for potatoes, rice or pasta with every meal. Made enough for two portions so I'm looking forward to a second helping tonight. It doen't take long to make either.

This Beef Stroganoff is awesome! Such a yummy flavour and feels like a real indulgence because of the hearty, creamy flavour. Sometimes I make it without the red wine because I think it tastes better, personally. Plus then I get to drink the wine with my dinner instead!
