Beef Meatballs with Tomato Sauce

Serves 2 (meals)

Meatballs

  • 250g beef mince
  • ½ small onion, grated
  • 1 tablespoon chopped fresh parsley
  • Dash of Tabasco sauce
  • 1 teaspoon dried oregano
  • 1 small egg, beaten
  • 20g parmesan, grated
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon finely grated lemon zest
  • Salt and black pepper

Tomato sauce

  • 2 teaspoons olive oil
  • 1 clove garlic, crushed
  • 200g canned tomatoes
  • ¼ teaspoon paprika
  • ¼ cup water
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1½ tablespoons chopped fresh oregano
  1. Preheat oven to 180ºC.
  2. To make the meatballs, mix together all ingredients in a bowl.
  3. Work mixture with hands until smooth, then shape into 12 balls.
  4. Heat a non-stick frying pan and brown the meatballs, then place in a roasting dish.
  5. To make the tomato sauce, heat the oil in a frying pan and cook the garlic for 1 minute.
  6. Add tomatoes, paprika, water, salt, pepper and ½ tablespoon of oregano.
  7. Cook for 5-6 minutes or until reduced and thickened.
  8. Pour the sauce over the meatballs, place in the oven for 10-15 minutes until meatballs are cooked through.
  9. Scatter over the remaining oregano to serve.

Tip: You can replace the beef mince with chicken mince in this recipe.

Made four times the quantities and added 4 teaspoons of chilli flakes to the sauce plus used smoky paprika. I made four times the quantity as I suspected this would be as delicious as it in fact was so needed extra to freeze for another day.

They tasted Devine. Will make it again that is for sure. I added chilli instead of tabasco. Served it on a bed of rocket. I did find my meatballs very fragile and they broke very easily while Browning. Maybe there was too much liquid in there?

really loved this easy recipe. I find lean beef mince very dry, so I used half and half beef and pork mince. Didn't have fresh parsley, but also didn't miss it. Served it with a green leafy salad, cucumber and home grown tomatoes with balsamic dressing. Love Love Love!!!

I might have to try these out too.
rfraser - not sure if you have found slim pasta yet but i recently did and although it doesn't taste like the real thing, it's certainly a great substitute. It is made from a vegetable called Konjac & has pretty much 0 carbs & calories. I found pasta, noodles & rice in the health food section of safeway. Near the gluten free stuff.

These turned out beautifully! I was really looking forward to trying them after reading all the comments and they did not disappoint! I have one of those veggie peeler/gadgets that turns zucchini etc. in to spaghetti shapes so I had it with zucchini 'spaghetti' instead of real pasta and everyone loved it (even friends who aren't doing CS)!!

I tried this out yesterday, added a chilli instead of Tabasco sauce, it was a major hit! My other half made himself some pasta to go with it. The sauce was delish too !

MikeStigs19, Essentially the instruction is there to make you aware that you'll need to have the oven hot by the time you're ready to put the meatballs in, so you can certainly use your own judgement to decide at what point you'd like to start heating the oven. You are right that it might take most people a while to prepare the meatballs and sauce, but it can also be done relatively quickly if you have the ingredients prepared and you work in an efficient and quick manner. We hope you enjoyed the meatballs!

what's the point of preheating the oven so early on. I think it's to list that as step 1 because it will be 40 to 60 minutes before the preperation is complete and it does not take that long for an oven to reach that temprature.

I cooked this last night. Loved it. Might add more to the meatballs next time (grated carrot and Zucchini). Served on a bed of sauteed cabbage. Even have left overs for another night.

Im not the best cook in the world if im honest, but i followed the recipe and instructions carefully, and it was LOVELY. Deffo going to be one of my faves!! I didn't use veg or salad with it either, it was pretty filling on it's own!

its great, i make this meatball dish and the chicken and spinach curry for dinner all the time before starting this program and now I can still eat my favorite foods. Its just an amazing plan!!
