Almond & Parmesan Crumbed Chicken with Minted Green Apple & Celery Slaw

Prep & Cooking Time: 60 minutes

Almond & Parmesan Crumbed Chicken:

  • 1 cup finely chopped slivered or flaked almonds (you may buzz in a spice grinder)
  • 2 - 3 tablespoons picked thyme
  • 4 tablespoons chopped parsley
  • 1/3 cup parmesan cheese, finely grated
  • 4 chicken breasts, each sliced into 3, on a diagonal
  • 4 tablespoons of cornflour
  • 2 eggs, lightly whisked
  • olive oil for greasing

Minted Green Apple & Celery Slaw:

  • 3 granny smith apples, peeled, cored, julienne
  • 4 radishes, halved and thinly sliced
  • 1 large stick of celery, sliced 2mm pieces
  • 1/2 packed cup of torn mint
  • 4 tablespoons light sour cream or low fat cream cheese
  • 2 tablespoons lemon juice or to taste
  • 2 teaspoons honey
  • salt & pepper
  • 4 wedges of lemon
  1. Preheat oven to 190ºC or 180ºC fan forced.
  2. Begin with combining the almonds, thyme, parsley, parmesan, pinch of salt and pepper in a bowl. With a rolling pin bash each piece of chicken between 2 pieces of cling wrap, until about 7mm thick all over. Dust each piece lightly with cornflour, then dip in egg. Let excess egg drip away and press into the crumb mix, coating each side thoroughly. Gently lay chicken pieces on a greased cake rack over a baking tray and bake for 3 - 4 minutes each side or until beautifully golden. If the crumb is still very pale, give it a quick blast under the grill - you want the nuts and parmesan to be toasted and crunchy.
  3. To make slaw, combine apples, radishes, celery and mint in a large mixing bowl.
  4. To make dressing, whisk sour cream, lemon juice, honey and salt and pepper. Pour into slaw and toss gently with clean hands, to coat salad. Set aside.
  5. To serve, place chicken pieces at the centre of a plate with the slaw on the side and a wedge of lemon for the chicken.

Loved the flavours I added a small amount of garlic in the crumbs. The slaw was perfect.

Bit of an interesting crumb... Quite bitter, for loss of a better word. But definitely love that I get to eat crumbed chicken minus the carbs :) I find that 3-4 mins each side is wayyy too short for the temp (180 fan forced), chicken is still completely raw. I do approx 15 min each side to make sure it's cooked through. Not a fan of the slaw so I just do a normal salad with the chicken :)

This dish was divine. My husband is thrilled that I'm making food that's good for him too AND tastes amazing. We both felt satisfied but very light afterwards and it took about twice as long for us to eat as normal because we were really savouring it.

I absolutely loved this! The salad is amazing.
I found that there wasn't enough crumb though 4 2 breasts of chicken!! I was only making 2 serves, so adjusted accordingly!

Just made this for dinner but had normal salad rather than the one suggested . I found it very tasty and would have it again but my hubby wasn't overly impressed with the coating so I may Just freeze some & have a portion as a snack.

I made the slaw tonight and it was delicious - husband and son both loved it too! I added cabbage as well as the other ingredients to bulk it up for the boys. This one will definitely become a regular dish in our house. Thanks Poh

Wow!!! Loved this. Favourite recipe so far. Will definitely be making again.
Chicken was moist. Crumbs were delicious.
With salad I substituted sour cream for Greek yoghurt. Taste and texture were great and less calories (plus I don't like sour cream or cream cheese).
Celebrity slim or not, this is a winner. Thanks Poh =)

This was nice, but to make my life easier I just used Almond Meal and also Chicken Tenderloins instead of cutting up the breast and bashing it out. Leftover cooked strips have gone into the freezer and I'll be pulling them out for my allowable snacks :)
