Cottage Pie topped with Cheesy Cauliflower Mash

Serves 2-3

  • 400g lean minced beef
  • 1 medium onion, peeled and sliced
  • 2 cloves garlic
  • 400g tinned chopped tomatoes
  • 300ml beef stock
  • Medium sized cauliflower (300g)
  • 50g reduced-fat grated cheddar cheese (plus 2 tablespoons for topping)
  • 10g butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 2 sticks of celery, chopped
  • Black pepper
  1. Place chopped cauliflower in a saucepan of water, bring to boil and simmer for 10 minutes.
  2. Preheat oven to 180ºC, meanwhile fry the onion, celery and garlic with oil for 3-4 minutes in a frying pan until softened. Add mince and cook until browned. Add stock, tomatoes and thyme and cook for 20-30 minutes until the liquid is absorbed.
  3. Drain cauliflower and mash adding the butter and cheese. Mix well to ensure the cheese melts. Keep warm until the mince is cooked.
  4. Pour mince mixture into an ovenproof dish, top with mashed cauliflower then sprinkle with extra cheese and bake for a further 15-20 minutes until brown.

Approx. 681 Calories per serving.

Delicious, made with mash potato on one side for family, and mashed cauliflower on other for me, huge hit with us all, made it twice already

So good, I made it with chicken mince as I don't eat red meat. Also added chopped red capsicum, some chilli, extra herbs and a bay leaf.

I am new to CS and I think this dish is really yummy,I made it last night, hubby and son loved it too, I am having leftovers for dinner tonight, they can have something else lol.
It is recipes like this that will make the loss of 20 to 30 kilos a little easier to do.
If ou haven't tried it, you are missing a treat.

681 Calories is over half of the daily calorie intake most people would be sticking to on this program. It was my understanding that each meal should really be between 300-350 Calories. There is not a heap of nutrients in this recipe. Beef Mince calories can skyrocket depending on where you are buying it from, some lean mince is not lean at all. If you were looking to lower the calories, Kangaroo or Chicken mince would be a good alternative. It also couldn't hurt to throw a few extra vegetables in this mix could it?

Delicious, my hubby hates cottage pie so I made a batch, made 2 portions - two nights dealt with, lol! I prefer turkey mince or quorn mince, does this affect the calories etc or quantities?

I just made this for tonight - I added more allowable veg as I had it in the fridge needing to be used. I tasted along the way: WOW. I doubled it as we are a family of 5 and I will freeze leftovers for nights when I haven't cooked. Brilliant. This diet is the only one that work for a busy mum of 3 :)

This was great hubby said he thought it was potato & then thought it was cheese couldn't believe it was cauliflower! He said he wants his cauliflower like this again!!

Yummy I usually do this anyway, but mash the cauliflower up so it resembles potato adding a little cayenne pepper to it and the cheese. Kids think they are eating potato hehehe ... it's not a lie if you don't tell them it's cauliflower instead of potato is it, I mean I don't tell them it's potato either :)
