Chicken with Wild Mushrooms & Smoked Bacon

Serves 2

  • 2 chicken breasts, sliced into strips
  • 200g mixed wild mushrooms (any type of mushrooms will work fine)
  • 1 small onion, finely diced
  • 1 garlic clove, crushed
  • 1 tablespoon olive oil
  • 3 rashers of smoked bacon (all fat removed) cut into 1cm pieces
  • 1 small glass of white wine (or a small glass of chicken stock)
  • 100ml light whipping cream
  • 1 tablespoon chopped parsley
  1. Heat a medium sized frying pan over a medium heat and when hot add half of the olive oil and seal the strips of chicken on all sides, remove the chicken from the pan.
  2. Next add the remaining olive oil, onion, mushrooms and smoked bacon and fry until the bacon starts to crisp.
  3. Add the chicken back to the pan with any juices, the garlic and white wine and bring to the boil then turn the heat down to a simmer.
  4. Finally add the cream and parsley bring slowly back to the boil and serve with steamed green beans and sugar snap peas.

Hi Stephanie and all, We've recalculated the calorie content of this recipe and it equates to 496-513 Calories per serve, depending on whether you use white wine or chicken stock (Calories per serve using chicken stock = 496, Calories per serve using white wine = 513). Hope that helps! :)

Soooo delicious. I used coconut cream in lieu of cream. Very yummy, very filling :) I was naughty and added a bit of salt :)

In regards to the confusion over the calorie count per serve...
By using:
1. chicken stock (instead of wine)
2. coconut cream (instead of ordinary cream as I'm lactose intolerant)
3. not adding calories for the veggies as they're free
that the calories per serve are between 460-480 (depending on the weight of the chicken breast)
Perhaps someone else would like to check this as well?

on the rapid program, how many calories are you allowed at dinner time. these recipes range from 170 calories to 600 calories, what are you actually supposed to eat.,

Can you please be more specific - how many are in a "packet" of mushrooms? Mushrooms here come loose, not in a packet. Or what is total mushroom weight?

Have made this 3 times in a fortnight and having it again tonight. The kids think it is amazing. I had no whipping cream so I used evaporated milk. It worked a treat so I've stuck with it. CAN'T WAIT FOR DINNER.

Made this tonight, was really yummy will definitely make again. :)
I used 3 chicken breasts and instead of using Bacon, I used prosciutto (removed the fat) and just used normal button mushrooms and cambells chicken stock.
I made enough for 2 lots of meals with enough sauce left to drissle over carrot and zucchini(that i served with dish).

made this last night, couldnt get mixed wild mushrooms so i just used shitake mushrooms and normal button mushrooms instead, also didnt have parsley so used shallots. still turned out amazing! deffinatley adding this to our family favourites menu!

I tried this for our family meal yesterday, and it was delicious!! My husband and son also loved it so I will definately be making this one of our favourite meals. So healthy too. I didn't have any wild mushrooms and just used the ordinary cap mushrooms and they still worked a treat.

Tried this last night.....We all loved it. Yummy flavour.
It says it serves 2, but we used 2 rather large chicken breasts and it fed 3 adults
with enough for tonight as well.
Will definitely be making it again.
