Chicken Casserole

Serves 2 (meals)

  • 1 tablespoon olive oil
  • 4 chicken drumsticks
  • ½ brown onion, halved and thinly sliced
  • 2 stalks celery, cut into 2 cm-thick slices
  • 1 clove garlic, crushed
  • 100g button mushrooms, thickly sliced
  • 400g canned chopped roma tomatoes
  • ½ cup chicken stock
  • 75g frozen broad beans, thawed and peeled
  • 2 teaspoons fresh thyme leaves
  • Salt and black pepper
  1. Preheat oven to 180°C.
  2. Heat the oil in a non-stick frying pan over medium heat.
  3. Add the chicken and cook, turning occasionally, for 5 minutes or until brown.
  4. Transfer chicken to a casserole dish. Add onion and celery to the frying pan and cook, stirring, for 5 minutes or until soft.
  5. Add garlic and mushrooms and cook, stirring, for 2 minutes or until mushrooms are tender.
  6. Add to casserole dish with the chicken, then add the tomatoes and stock.
  7. Cover with a lid or foil and bake for 30 minutes or until chicken is tender.
  8. Add broad beans and thyme and cook for a further 5 minutes or until broad beans are tender.
  9. Remove from oven, season with salt and pepper and serve.

Tip: You can also use sliced green beans instead of the broad beans.

My whole family enjoyed this meal. I turned the heat up the oven to 210C and cooked it for an hour. Tasty.

Quite tasty - more of a soup consistency. I added a little peri peri hot sauce for extra flavour (a little rule breaking ) very delicious!

Reading all comments on this dish, I will be making it but will have a play with some herbs & maybe use 3/4 of the can of tomatoes :)

I agree with Frisbar - was a bit bland and the sauce was very watery and lacked punch. May have been the brand of canned tomatoes I used perhaps. Probably won't make it again.

This was yummy. Did it for a dinner party, all loved it. I added beans and tuscan herbs then served with rice for guests and steamed veg for hubby and myself.

I didn't enjoy this as much as I thought I would have. The sauce was a bit watery and lacked some punch, maybe add a few more herbs or spices next time? Also, even though I had this in the oven for almost 50 minutes, the chicken was still quite raw :( I browned it ahead of time and had the oven at the right temp, so not too sure what happened...

I love this meal!! made it last night and doubled the ingrediants, but ended up with loads too much sauce! so kept it and whizzed it down to make soup!! yum!!

well i'm trying this for tea tonight, my 2 children love 'real food'... plenty of veg with it and few salad pot's for the kids and hubby.

Have added a few carrots and some vine toms to. ;-)))
